    Blueberry & Peach Overnight Oats With Greek Yogurt

    Rich, creamy, and topped with plenty of blueberry and peaches, these overnight oats with Greek yogurt are virtually a hands off breakfast you'll quickly fall in love with.

    A recipe you can easily throw together in under 10 minutes on a Sunday night, (then enjoy all week long), this simple breakfast will give you the energy you need to start your day off on the right foot.

    Overnight Oats vs. Regular Oatmeal

    Whats the difference between overnight oats and regular oatmeal cooked on the stove top?

    For one, overnight oats taste much better (in my opinion!). In all seriousness though, the main difference is that overnight oats are not technically cooked.

    Overnight oats are steeped in liquid overnight (usually milk and yogurt with various flavorings), allowing them to soak up the liquid and become soft enough to easily digest for regular folks. They are most often eaten cold though they can be warmed up in a pot or microwave if desired.

    It should be noted that if you have digestive issues, you may want to avoid eating overnight oats, and consume oatmeal cooked the old fashioned way, as the oats break down more when they are cooked.

    Traditional oatmeal is cooked with milk or water on the stove (anywhere from 5 to 15 minutes depending on the type of oats used), and served hot.

    What Kind Of Oats Are Best To Use?

    When making these blueberry and peach overnight oats, I would suggest using traditional rolled oats, not quick oats, or steel cut oats.

    • Traditional or simply Rolled Oats, are oat grouts which are steamed and then rolled allowing them to cook faster once dried. They are perfect for overnight oats and will 'cook' and become creamy in about 8 hours.
    • Quick oats are virtually the same as traditional whole rolled oats, except they are cut smaller making them cook faster. This also means that if you use quick oats in an overnight oat recipe, they will be 'cooked' in as little as 30 minutes.
    • Steel cut oats are whole oat grouts chopped up into two or three pieces, and due to their thickness take a long time to cook, or absorb liquid.

    Can Other Toppings Can Be Added To Overnight Oats?

    While this overnight oats with Greek yogurt recipe calls for blueberry and peaches as the flavoring, you can very easily substitute other fruit, either fresh or frozen. Homegrown strawberries are perfect, as are raspberries, bananas, apples, dried cranberries, and raisins.

    You can even add nuts, seeds, granola, or chocolate chips if you want! Your imagination is the limit here!

    Blueberry & Peach Overnight Oats With Greek Yogurt

    While I used fresh fruit in this recipe you can easily substitute frozen fruit if you like. Note that frozen fruit will leach more color as they thaw and color the oats!

    To make these overnight oats you'll need:

    • 2 cups rolled oats
    • 2 cups milk
    • 2 cups Greek Yogurt
    • 4 tablespoons brown sugar - honey, maple syrup or molasses may all be substituted
    • ½ cup fresh or frozen blueberries
    • 2 large peaches or ½ cup diced frozen peach chunks

    You'll also need five to six 250ml or 500ml Mason Jars. I prefer the larger jars and simply fill them half way, this allows me to add the fruit and mix it mess free once the overnight oats have set.

    Do you have to use mason jars? No you can use any food safe container, though I find mason jars make portioning easy!

    Instructions

    1. Measure out all the ingredients, and set the fruit aside in the fridge for later.

    2. Mix the rolled oats, milk, Greek yogurt, and sugar in a large bowl. You could optionally add the fruit now, to skip the last step.

    3. Mix well and then portion the mixture into individual mason jars. I fill mine half full to allow for fruit to be added later. Let the oats sit overnight in the fridge for best results or for at least 8 hours.

    4. When you are ready to eat the overnight oats, remove a jar from the fridge, open it and mix in some of the fresh fruit. Serve immediately.

    How Long Will These Overnight Oats Last In Your Fridge?

    As the overnight oats are literally prepared while under refrigeration, there is very little chance of bacterial contamination, or of bacteria growing. Of course once you mix in fruit that changes, but even then, overnight oats will easily last 4-5 day if sealed in jars in the fridge.

    Once opened a jar of overnight oats should be consumed immediately.

        It would still be creamy because the oats will soften and swell as they absorb liquid, but you are correct, the Greek yogurt does add creaminess to the overnight oats.
